It feels so good to be back to classes at Degree Fitness after a 4 week absence! I tried two workouts on my own last week to see where I was at and what my body was ready for after having an appendectomy. The first workout on my own was great, after that the motivation was really lacking. It didn't help that this was over Christmas and there are so many delicious (but not so healthy) food traditions associated with the holidays. It was interesting to note that most of the foods tied to my cultural heritage are tied around the holidays. Now it's time to get back on track. Get moving more, eat better, be mindful. Now that my body has healed it's time to get back to my normal routine of taking care of my body physically, mentally and spiritually; maybe even improving it.
When it comes to meal planning, meal prep my mind tends to think on the grand scale. Though if I check my house carefully there are lots of pre-preps already done. Baked goods, soup, apple sauce, marinated meat all in the freezer. A well stocked pantry, fridge and freezer. At times there are even heat and serve meals available. I'll be sharing some of the recipes as I meal prep them. In reality as a single person household I meal prep a lot just due to the fact that one recipe may provide me with 2 or three meals; the same holds true for a roast. Tonight's dinner consists of the leftover pork roast from Saturday and leftover mashed potatoes from last night. Add in some veggies and dinner is easy. For lunch I had soup from a huge stack of soup I prepared this fall.
